Homemade Apple Pie

I volunteered at a 5K and I was paid in apples and bananas! Yummy. My daughter and I made Banana Bread last week and we just completed our first Apple Pie. I’ve never been much of a baker, but this came out incredibly well and was better than any store bought pie. I did use frozen pie crusts, but from a quality control/fun perspective( she made the slits for the pie – see above), it was the right decision.

Ingredients

1 package of frozen pie crusts

1 cup sugar

6-8 apples; pared, cored and thinly sliced

dash of salt

2 tablespoons flour

1 teaspoon nutmeg

1 teaspoon cinnamon

2 teaspoons lemon juice

Combine flour, sugar, and spices. Mix with apples. Cook in pan for 3-5 minutes or until apples have carmelized. Line 9-inch pie plate with pastry. Fill with apple mixture. Place top crust and add slits (for steam), Bake at 400 degree oven for 45 minutes, or until done. Let cool for 10 minutes and enjoy with your favorite ice cream.
